Making these vanilla cupcakes, I am reminded of the children's book "If You Give a Mouse a Cookie" by Laura Numeroff. According to the story, if you give a mischievous mouse a cookie, he's going to ask for a glass of milk. And chances are, if he asks for a glass of milk, he's going to want a cookie to go with it! When I told my daughter she could pick out "one" snack at the grocery store, she decided on Vanilla Wafer cookies. Upon returning home, she decided she needed to make a vanilla cupcake to go with it. As she was eating the cupcake, she decided it would be nice to have a miniature vanilla cupcake to go with her regular size vanilla cupcake. After making the miniature vanilla cupcakes, she was hungry and wanted some Vanilla Wafers to go with them! I guess the moral of the story is you can never have too many cookies or too many cupcakes, so stock up! One cookie will quickly lead to a cupcake which will lead to these creamy Vanilla Wafer cupcakes! Ingredients Cupcakes: 1 box Vanilla Wafer cookies; one yellow cake mix or ingredients for our recipe for vanilla cupcakes. Vanilla buttercream frosting: 2 cups powdered sugar; 1/4 cup shortening; 1 stick butter; 3 tablespoons milk; 1 tsp. vanilla extract Directions: Preheat oven to 350 degrees. Prepare cake mix according to directions on box or prepare our recipe for vanilla cupcakes (see above). Line a cupcake tin with liners and place one Vanilla Wafer into each liner. Pour batter over the cookies, until they are 2/3 full. If desired, grease a mini cupcake pan and fill each spot 2/3 full of batter. Bake regular size cupcakes for 18-20 minutes, or until a toothpick inserted into the center of cupcakes comes out clean. Bake mini cupcakes 10 minutes or until golden brown on edges and tops. Frosting: Using the paddle attachment of a stand mixer, cream together butter and shortening. Add vanilla and milk. Gradually add powdered sugar. Mix on medium speed for 5 minutes or until light and fluffy. When cupcakes are cooled, pipe frosting onto center of each cupcake and top with a Vanilla Wafer. Fill each liner with a Vanilla Wafer for a crispy crust. Make some mini cupcakes to go with your vanilla cupcakes, if you little "mouse" requests it!
