It's not even October and our kids are already taking about Halloween. Even though their Halloween costumes are a priority, the biggest item on their agenda is selecting the perfect candy bars to hand out to trick-or-treaters. These Twix cupcakes are made with their all-time favorite candy bar. And I have to admit, it's one of mine, too! I've always had a sweet spot for chocolate and caramel. And who wouldn't appreciate a little cookie crunch in their lives?! Even though I haven't decided on which decorations to put on my mantle or which Halloween lights to string on my porch (pumpkin or ghost lights...it's a big decision!), these Twix cupcakes made it easy for me to decide which candy we'll be passing out this year! Here's how we made these trick-or-treat Twix Cupcakes:
Ingredients Cupcakes: One box of yellow cake mix, plus water, oil, and eggs or ingredients for our recipe for vanilla cake; 6 fun size Twix bars; pinch of flour for coating can bars. Chocolate frosting: 2 and 1/2 cups powdered sugar; 1/4 cup cocoa powder; 1 tsp. vanilla; 1/2 stick butter; 1/4 cup water Garnish: One small jar caramel sundae topping Directions Cupcakes: Preheat oven to 350 degrees. Prepare cake mix according to package directions or prepare our recipe (see link above). Chop Twix bars into small pieces and sprinkle with flour to prevent candies to sinking to bottom of cupcakes while baking. Gently fold into the batter. Line a cupcake tin with cupcake liners and fill each 2/3 full of batter. Bake for 18-20 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean. Allow cupcakes to cool. Chocolate frosting: In a mixing bowl fitted with a paddle attachment, mix the butter on medium speed until light and fluffy. Add cocoa powder, vanilla, and water. Gradually add powdered sugar. Mix on medium speed for 3-5 minutes. When cupcakes are cooled, pipe frosting onto the center of each cupcakes. Garnish: Place caramel sundae topping into a small microwave bowl.
