Although it sounds fancy, tres leches cupcakes are very easy to make. As the name implies, three types of milk are used-heavy cream, condensed milk, and evaporated milk. Being huge fans of anything milky and creamy, I decided to give these a whirl. Although tres leches is traditionally a Spanish sponge cake, I decided to make these as modern day "poke" cupcakes. I pierced the top of the baked cupcakes and let the milky mixture soak into the cupcakes-yum! And since they looked a little bare on top, I gave them a dusting of cinnamon, which added some extra zip. So, they're a little traditional and a little modern, but a whole lot of delicious!
Cupcakes: 2 and 3/4 cups flour; 2 cups sugar; 1 tsp. vanilla; 3 eggs; 1 stick butter; 1 cup whipping cream; 1/4 cup oil; 2 tsp. baking powder; 1/2 tsp. baking soda.
Tres leches filling: 1 cup evaporated milk; 1/2 cup condensed milk; 1/2 cup heavy whipping cream
Whipped cream icing: 2 cups heavy whipping cream; 1 tsp. vanilla; 1/4 cup granulated sugar; cinnamon for garnish
Cupcakes: In a large mixing bowl, combine flour sugar, baking powder, and baking soda. In another large bowl, combine the softened butter; vanilla; eggs whipping cream and oil. Add the wet ingredients to the dry ingredients. Using an electric mixer, mix for 2 minutes on medium speed. Pour batter into cupcake liners in pan, filling 2/3 full. Bake cupcakes at 350 degrees for 18-20 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
Filling: In a medium size bowl, combine evaporated milk; condensed milk; and heavy whipping cream. When cupcakes are cooled, generously poke holes into the tops of cupcakes, using a fork Use a spoon to gently pour milk mixture over cupcakes, allowing it to soak into the cake. Refrigerate for 2 hours.
Whipped cream icing: Chill mixing bowl and whisk for 1/2 hour before making icing. Using a stand mixer, whip the cream on high speed until stiff peaks form. Add vanilla and sugar. Whip until combined. Place icing in a piping bag and swirl onto the center of cupcakes. Lightly dust tops of cupcakes with cinnamon.
Use a fork to poke holes into the tops of the cupcakes. Don't be shy! Poke away!
