It's hard to believe fall is almost here. Next week, the kids go back to school and summer will be officially over. Our days of sleeping in late are dwindling down as we prepare for setting our alarm clocks for 6 a.m. To ease my kids into the school year, I made these spicy caramel apples cupcakes. Living in the mid-west, we are fortunate to have an abundance of apples this time of year. I used a cup of locally grown gala apples and added some cinnamon and nutmeg to give the recipe some fall flair. I sliced the apples using my Wyndham House 3 inch paring knife that I received in a 5 piece set in exhcange for an honest review. (see image below recipe). Fall is an exciting time for new recipes, new teachers, new products, and new beginnings. But I have to admit, the house is empty and way too quiet when the kid are away. But even though the start of the school year is bittersweet, these spicy caramel apple cupcakes are simply delicious!
Ingredients 1 box yellow cake mix plus water, oil, and eggs, or ingredients for our recipe for vanilla cake; 2 large gala apples; 2 tsp. cinnamon; 1 tsp. all spice; 1/2 tsp. nutmeg; 1 16 ounce container caramel apple dip; one 12 ounce jar cookie spread (also called cookie butter, and can be found with the peanut butter in most grocery stores) or almond butter (almond butter has a more natural taste but is usually twice as expensive) one container store bought chocolate icing Directions Preheat oven to 350 degrees. Prepare cake batter according to directions on box or prepare our recipe for vanilla cupcakes (see link above) and place into a lined cupcake tin. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. When cupcakes are cooled, place the caramel apple dip and cookie butter (or almond butter) in a medium size bowl. Stir until smooth and spreadable. Use a knife to spread onto cupcakes. Fill a decorating bag fitted with a half-moon or small round decorating tip. Fill bag with store bought chocolate icing. Pipe frosting onto the top of cupcake for a "stem." Makes 24 cupcakes.
