Memorial Day is coming up, and I'm been thinking of easy dessert recipes to make for the occasion. This is always a big holiday in our family, as my son and husband both have birthdays to celebrate over the Memorial Day weekend. My husband could probably skip the big fanfare, but my soon to-be fourteen year old son is all about celebrating with lots of yummy desserts! This year, I decided to combine two of his favorites-s'mores and Rice Krispie Treats. I must say, this is one heck of a dessert combo! I used semi-sweet chocolate chips and Teddy Grahams for the filling and broiled marshmallows for the topping. They disappeared faster than I could put them on the plate! These are bound to be a hit at your holiday party if your family loves s'mores desserts as much as mine!
To make the Rice Krispie treats I basically followed the recipe on the box-with the exception of one change. I always remove one cup of marshmallows for a 10 ounce bag, so they are much firmer than the standard recipe. This makes it much easier to cut into pretty squares, as well. Normally, I use name brand semi-sweet chips for the chocolate. But I've been experiencing with some generics lately. I've found as long as the bag doesn't say "chocolate-ish" or "chocolate like" in place of semi-sweet chocolate chips, you should be in the clear! Not to mention, store brands are usually much less expensive than name brands. Not to say there aren't times when you should stick to your loyal brand. But for this recipe, you can easily go generic and your S'mores Rice Krispie Treats will turn out just fine. Here's how I made these tasty S'mores Rice Krispie Treats: Ingredients: 4 cups regular sized marshmallows; 3 tablespoons butter; 6 cups Rice Krispie cereal; 2 cups semi-sweet chocolate chips; 1 cup honey flavored Teddy Grahams; 3 cups mini-marshmallows Directions: Melt butter and marshmallows in a large heavy saucepan over medium-low heat. Make sure to stir frequently to avoid marshmallows sticking to bottom of pan. Remove from heat. Add Rice Krispies, semi-sweet chocolate chips, and Teddy Graham crackers. Stir well to evenly combine ingredients. Pour into a greased 11x9 pan or a 11x9 pan fitted with parchment paper. Use a buttered spatula to firmly pack the treats into the pan. Allow treats to cool. If using parchment paper, lift from pan. Cut into 12 squares. Place marshmallows on a foil lined broiling pan. Set oven to low broil setting. Do not allow oven to preheat. Place mini-marshmallows in the oven. Watch closely. Remove with they are browned on top (about 3-5 minutes.) Marshmallows should be slightly melted together. Use a spatula to scoop a small batch of melted marshmallows on the tops of each S'mores Rice Krispie Treat.
