Rainbow in the Clouds Cupcakes
These were originally supposed to be "tie dye cupcakes." Julianna, with her vibrant personality and love for throw back, sixties style tie dye T-shirts, requested we make these. The colors blended beautifully and they looked amazing. But after we piped the buttercream on top, I thought it resembled a cloud. Then I noticed a rainbow peeking out from underneath, and I realized we created something different than our original idea. Ironically, we saw our first spring rainbow this week. I always think of "Somewhere Over the Rainbow" whenever I see a beautiful arch of colors in the sky. Like the song implies, rainbows are a symbol of future possibilities. Maybe our vision of tie dye cupcakes didn't materialize, but when the clouds lifted, a beautiful rainbow emerged.

Cupcakes: One box of your favorite white cake mix; 1/3 cup oil; 3 eggs
Frosting: 3 cups powdered sugar; 3 tablespoons milk; 1 stick margarine; 1/4 cup shortening; 1 tsp. vanilla; sprinkles for garnish
Directions
Cupcakes: Preheat oven to 350 degrees. Prepare cake mix according to directions on box. Separate batter into four bowls. Place three drops of blue food coloring into one of the bowls and stir. Color the remaining three bowls of batter with rainbow colors, such as red, green, or yellow. Make purple by mixing red and blue. Alternate colors to fill the cupcake liners 2/3 full with batter. Place a scoop of blue batter on top near the center to make a blue "sky" if desired.
Icing: Using an electric mixer, beat butter and milk until light and fluffy. Gradually add powdered sugar. Add milk, shortening, and vanilla.. Beat on medium speed until soft peaks form. When cupcakes are cooled, pipe a swirl of vanilla frosting on the top of each cupcake. Generously garnish with assorted sprinkles.
