Oreo S'mores Cupcakes
When I came across the display of Oreo S'mores cookies next to the check-out, I stopped in the middle of the grocery store. For those who've been grocery shopping with m, know I do not often come to a complete halt in the middle of the store. Normally, I am pushing a cart at full speed, while trying to rush home to get my kids off the bus. But today, I stopped in my tracks for these Oreo S'mores cookies. As if the cookies themselves weren't yummy enough, I created these Oreo S'mores cupcakes with an Oreo S'mores cookie at the bottom and marshmallow cream frosting on top. It's not your tradition s'more by any means, but they certainly taste AMAZING! Run, do not walk, to your grocery store to get these limited edition cookies while they last!
Ingredients: Cupcakes: 1 box devil's food cake or our recipe for devil's food cake, one package Oreo limited edition s'mores cookies
Frosting: One 7 ounce jar marshmallow creme; 1/4 shortening; 1 stick butter; 3/4 cup powdered sugar; 1 tsp. vanilla
Garnish: 12 mini-marshmallows; 6 Oreo s'mores cookies cut in half
Directions: Preheat oven to 350 degrees. Prepare cake mix according to package directions. Line cupcake tin with cupcake liners. Place one Oreo s'mores cookie into each liner. Pour batter over each cookie, filling 2/3 full.
Frosting: Using the paddle attachment of an electric mixer, cream together shortening and butter. Add marshmallow cream and vanilla. Gradually add powdered sugar. Mix on medium speed for 5 minutes. When cupcakes are cooled, pipe onto centers of cupcakes.
Garnish: Put oven on broil setting. Line broiling pan with tin foil. Broil mini-marshmallows for 3 minutes or until browned. (Watch oven closely so they don't burn!) Place one mini-marshmallow on top of each cupcake along with half of an Oreo s'mores cookie.

Run to your supermarket for these limited edition Oreo s'mores cookies...they'll be gone before you can eat them!
Place one Oreo in each cupcake liner and pour batter over the cookie. Don't pour the batter first or the cookie will rise to the top!
