Summer vacation officially kicks off this week. One of the first things my kids like to do is visit our downtown candy shop called Oh My Lolli. Each lollipop is handcrafted and uniquely flavored to suit the pickiest of taste buds. Although they have every flavor imaginable, one of our favorites is orange cream. It may not be as trendy of a flavor as let's say lemon pomegranate, but it's a good old fashioned flavor that stands the test of time. There's something about orange and cream that go hand in hand-like peanut butter and jelly and chocolate and Nutella- it just works. Oh My Lolli started its business in a down cycle of our economy. The owner did some research which showed candy shops endured, even during the Great Depression. I have a feeling Oh My Lolli will be around for awhile and so will their old fashioned flavors. Orange creams lollipops were the inspiration for these tangy orange creamsicle cupakes Ingredients Cupcakes: 1 box white cake mix or our recipe for white cake; 2 tablespoons orange zest; 1 tsp. orange flavored baking oil.; approximately 7 drops orange food coloring; 1 tsp. vanilla. Frosting: 1 cup powdered sugar; 1/2 cup shortening; 1 stick butter; one 7 ounce jar marshmallow cream; 1 tsp. vanilla; 3-5 drops orange food coloring; 1 tsp. orange flavored baking oil Directions Preheat oven to 350 degrees. Make cake mix according to directions on box. Add orange zest and orange baking oil. Add approximately 7 drops of orange food coloring and stir. Add more if desired, until desired orange color is achieved. Line a cupcake pan with liners. Fill each liner 2/3 full. Bake for 18-20 minutes, or until a toothpick inserted into the middle comes out clean. Frosting: Using the paddle attachment of a stand mixer, cream together butter and shortening. Add marshmallow cream, orange baking oil, and vanilla. Gradually add powdered sugar. Place half of the frosting into a bowl. Add 3-5 drops of orange food coloring (or more if needed) until desired orange color is achieved. Place the orange icing into one side of a pastry bag. Place the remaining uncolored frosting into the other side of the bag, making sure the two colors do not touch. When cupcakes are cooled, pipe icing onto center of cupcakes. If desired, garnish with an orange cream lollipop or other orange flavored candy. Orange zest adds fresh orange flavor to these cupcakes
