As I'm receiving my Thanksgiving magazine subscriptions in the mail, I'm already brainstorming ideas for the holidays. I also help to put on a luncheon for our parent teacher conferences in the fall, so I'm also looking for some new healthy dishes that the teacher might dig (and maybe they'll go easier on me at conference time, lol!) So I decided to combine some of the greens I love the most-cabbage, kale, and romaine lettuce-to create this kale slaw salad. I added some toasted sesame seeds and veggies and drizzle a lemon-strawberry vinegrette on top. I just found out this was runner up in a magazine contest for Taste of Home Magazine, so I'm really excited to share this with my readers. This is the start of a new chapter of my blog, as I've included mainly sweets and baked goods on the site. But I like to think life is all about balance. I've learned to balance my kids, family, dogs, and blog through the years and now I'm finding balance in the foods I love the most in life. Hope you enjoy this new endeavor as much as I do!
Salad: 5 cups chopped Kale; 3 cups chopped Romaine lettuce; one 14 ounce bag of shredded cole slaw mix; 1/2 cup shredded red cabbage; 1 thinly sliced fennel bulb; 1 cup chopped broccoli; 1/4 cup sesame seeds; 1 tablespoon olive oil 1/3 cup feta cheese
Strawberry lemon vinaigrette: 1/3 cup olive oil; 3 tablespoons toasted sesame oil; 2 tablespoons honey; 2 tablespoon apple cider vinegar; 2 tablespoons lemon juice; 1/3 cup purred strawberries
Salad: Place chopped kale and Romaine lettuce in a large serving bowl. Add cole slaw mix, cabbage, sliced fennel bulb, and chopped broccoli. Preheat oven to 350 degrees. Place sesame seeds on an ungreased baking sheet. Bake until lightly browned on top (approximately 7-8 minutes). Add to salad. Add feta cheese. Toss to combine ingredients.
Strawberry lemon vinaigrette: In a small bowl, combine the olive oil and toasted sesame oil. Whisk in the honey, cider vinegar, and lemon juice. Puree the strawberries to make 1/3 cup. Add to the other ingredients in the dressing. Whisk until combined.
