These Vanilla Cupcakes with White Chocolate Ganache Frosting Will Fill Your Heart (and tummy) with Joy This Valentine's Day
Valentine's Day is approaching, and I'm in the mood for chocolate! This year, I thought I would take a break from milk chocolate to pay tribute to my favorite chocolate flavor: white chocolate. These Vanilla Cupcakes with White Chocolate Ganache will make your sweetie's heart swoon! Vanilla bean yogurt elevates the flavor of the cupcakes and white chocolate chips adds richness to the icing. If you cannot find vanilla bean yogurt at your supermarket, you can use plain vanilla yogurt and the seeds of 2 vanilla beans. Vanilla beans are a bit expensive, so I use vanilla bean yogurt if I have it handy.
These Vanilla Cupcakes with White Chocolate Ganache Frosting were such a hit with my family that I decided to make them another batch! Maybe I'll run some over to the neighbors, as I think our hearts (and tummies!) are full this Valentine's Day! Here's how I made these Vanilla Cupcakes with White Chocolate Ganache Frosting:
Cupcakes: 1 and 1/2 cups plus 2 tablespoons cake flour; 1 cup white sugar; 1 and 1/4 tsp. baking powder; 1/4 tsp. baking soda; 1/8 tsp. salt; 2 eggs whites; 1/4 oil; 3/4 cup whole milk; 1 carton vanilla bean yogurt; 2 tsp. vanilla extract.
White Chocolate Ganache Frosting: 1/2 pint heavy whipping cream; 2 cups white chocolate chips; 1 cup powdered sugar; 1 tsp. vanilla extract; 1-2 tsp. of milk.
Cupcakes: Preheat oven to 350 degrees. Line a cupcake tin with 12 liners. In a large mixing bowl, combine the cake flour, sugar, baking powder, baking soda, and salt. In a separate medium size mixing bowl, combine the egg whites, oil; whole milk, yogurt, and vanilla. Add the wet ingredients to the dry ingredients. Using a hand mixer set on medium speed, beat the cake mix for 2 minutes. Fill each cupcake liner 2/3 full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center of the cupcakes comes out clean.
White Chocolate Ganache Frosting: Heat the heavy cream in a small heavy saucepan set over a burner on medium heat. Just as it comes to a boil, remove from the burner. Place the white chocolate chips into a medium size mixing bowl. Pour the cream over the chips. Allow the mixture to set for 3 minutes, and then whisk until smooth. Set the ganache aside and allow it to cool completely. Add the powdered sugar vanilla, and milk (one tsp. at a time) to the ganache. Using a hand mixer, whip the icing until soft peaks form. If icing is too stiff, add an additional tsp. of milk, until the desired consistency is reached. Place frosting into a piping bag fitted with an open star tip. When cupcakes are completely cool, pipe a swirl of icing onto the center of each cupcakes. Makes approximately 12.
