It's Girl Scout cookie season! My favorite time of the year for cookies! I bought a box of Thin Mints (and maybe a few more) from my niece this year. Although Thin Mints are so tasty they can easily be enjoyed on their own, I decided to incorporate them into this Thin Mint Brownie Trifle. Oh yes, that's right-I folded Thin Mints into the brownie batter to give them an extra minty flavor. Then I scooped some mint chocolate chip ice cream on top, drizzled chocolate sundae topping over the ice cream, and garnish the dessert with (what else?!) a Thin Mint cookie. I placed my brownies into mini trifle dishes, but a 4 inch deep bowl works just as well. These brownies are very "cake like" so they will rise quite a bit. But don't be alarmed by their size. Once they melt with the ice cream and chocolate sundae topping, they turn softer and more "fudge like."
These Thin Mint Trifles are not only putting me in the cookie mood, they're getting me pumped for St. Patty's day, too. Anything green and minty and chocolatey is right up my ally! I might need to hit my niece up for a few more boxes before March is over!
