It's been awhile since I've updated my "vanilla" section of the blog. When Influenster asked me to team up with them to promote these Smash Mallow Cookie Dough Bites I was totally on board! Smash Mallow gluten free marshmallow snacks comes in various flavors such as cookie dough, churro, and chocolate dipped. I found this 4 ounce bag at Target. You may need to have an associate help you locate them, as they were tucked away in their snack aisle. They are delicious on their own, but I decided to get creative with these Smash Mallow treats. I melted some vanilla candy coating and added 2 tsp. of cookie dough extract. This added some flavor to the candy coating, as I find it a bit bland on its own. Then I topped off the Smash Mallow Cookie Dough Bites with miniature chocolate chips.
These were a huge hit with my daughter! In fact, I may have to hide them from her! It's supposed to be cold this Mother's Day weekend, with frost advisories in the forecast overnight. I think I'll curl up with a good book and these Smash Mallow Cookie Dough Bites! Happy Mother's Day to all you moms out there. I hope you do something to treat yourself this weekend. Here's the recipe for these Smash Mallow Cookie Dough Bites:
Ingredients: One 4 ounce bag Smash Mallow Cookie Dough flavored snacks; 12 ounces vanilla candy coating; 2 tsp. cookie dough extract (or vanilla extra if you prefer; I like using clear extract so it doesn't tint the chocolate); 1/2 cup miniature chocolate chips.
Directions: Place candy coating and extract in a medium microwave safe bowl. Heat for 1 minutes. Stir. Heat in 30 intervals until fully melted. Line a baking sheet with waxed paper. Place one Smash Mallow Cookie Dough snack on a spoon and submerge into the melted candy coating. Tap the spoon on the side of the bowl to allow excess chocolate to drip off. Place on the waxed paper to day. Repeat until all are coated. Garnish with miniature chocolate chips.
