Breakfast is my family's favorite meal of the day. Dinners and lunches they could take or leave, but pancakes and bacon are always a hit with the kids! In fact, they like breakfast so much, I often serve breakfast for dinner. I'll make French toast or pancakes, served with a cup of yogurt and a slice of bacon on the side. I decided to combine some of my kids' favorite breakfast foods with these Maple Syrup Cupcakes. I added maple syrup to the cupcakes batter, and Greek yogurt with the cream cheese (although I discovered recently you can buy cream cheese with Greek Yogurt already incorporated-who knew?!) Of course, I garnished the cupcakes with bacon-because that seems to make any food more palatable in my family! Now, the hard part is waiting until after dinner ("breakfast") to enjoy these cupcakes!
