Confetti funfetti days are the good days. When Julianna and I make these cupcakes, we are usually celebrating a big event. Last summer, I made funfetti cupcakes for her birthday. Being a major funfetti fan, she peppered the top of her cupcakes with colored sprinkles. I explained to her that the sprinkles were mainly supposed to go inside the cake, but she has her own opinion on this matter!
So today, I decided to make a more subtly decorated funfetti cupcake with confetti sprinkles. Although we are not celebrating anything in particular, it reminds me of New Year's Eve with our family. Every year, my kids love to throw confetti and shout "Happy New Year!" at the tops of their lungs. It takes 2 seconds to throw the confetti and 20 minutes to vacuum the confetti pieces wedges between couch cushions. But it reminds me of when I was little and this was our family tradition. So, despite no major milestone to celebrate, I'm making confetti funfetti cupcakes to honor our past, present, and future celebrations. And...whew! Julianna liked the pastel sprinkles!
2 and 3/4 cups all-purpose flour; 2 cups sugar; 2 tsp. baking powder; 1/2 tsp. baking soda; 1/2 tsp. salt; 1 cup milk; 1/2 cup butter; 2 eggs; 1 tsp. vanilla, 1/3 cup sprinkles
3 cups powdered sugar; 2 tablespoons milk; 1 tablespoon vanilla; 1 stick butter; 1/4 cup shortening
Heat oven to 350 degrees. Combine flour, sugar, baking powder, baking soda, and salt in a medium bowl. In a large mixing bowl, combine milk, butter, eggs, and vanilla. Stir on medium setting of electric mixer for 2 minutes. Add sprinkles and dry ingredients. Mix until combined. Pour batter into lined cupcake tins. Bake for 20 minutes. Makes 24 cupcakes.
Add butter, milk, and vanilla to large mixing bowl with paddle attachment. Cream together ingredients until combined. Add shortening. Gradually add powdered sugar.
