Summer vacation is officially here! The kids came home all smiles this past Friday afternoon. Final exams are over, and it's time to kick back for a couple months! I like to start off our summer break with a special celebratory recipe. Since we've had temperatures in the 90's all week, I decided to create this Frozen Rainbow Sherbet Smoothie. Rainbow sherbet is a long time favorite of mine. It encompasses all the summertime flavors that I love, such as orange, lime, and raspberry. I blended some fresh fruit and Greek key lime yogurt into the recipe to bump up the flavor even more. I can't wait to sit on the patio and enjoy this smoothie with my kids. It's a refreshing start to our vacation! Cheers! Hope you have a nice relaxing summer, as well! Here's how I made the Frozen Rainbow Sherbet Smoothie recipe:
Ingredients: 1/2 cup rainbow sherbet; 1/2 cup fresh raspberries; one 11 oz can mandarin oranges; 1 tablespoon honey; one 5 oz carton Dannon Oikos Key Lime Greek Yogurt; 3 tablespoons orange juice
Directions: Pour the orange juice into the bottom of blender. Add the raspberries and mandarin oranges. Add the yogurt and honey. Blend for 1 minute or until smooth. Pour smoothie mixture into 2 glasses. Top each glass with one scoop of sherbet (approximately 1/4 cup each). If desired, use a plastic straw to gently stir the sherbet into the glass for a "marbled" look. Freeze smoothies for 4 hours or until firm. Serves 2.
