My family had an awesome time ringing in the new decade at our vacation villa in Florida. We enjoyed key lime pie at beachfront gulf coast restaurants and devoured butter pecan ice cream cones at the central Florida theme parks. It's time to get back into my exercise routine and eat a bit healthier. (although I will be posting some banana nut muffins and strawberry shortcake muffins shortly, so I'm not on a permanent hiatus from baking!) But for now, these Feta Bruchetta baguettes are a hearty start to the New Year. Fresh basil and olive oil keep this recipe true to its Italian roots, while feta cheese gives this Feta Bruschetta recipe some unique Mediterranean flair. These Feta Bruchetta baguettes are dainty enough for serving as appetizers, but they are filling enough to serve for a light lunch fare.
I hope you are having an amazing start to the New Year! Here's how I made these Feta Bruchetta baguettes:
Ingredients: 1 Italian baguette; 3 tablespoons extra-virgin olive oil; 1 tsp. dried oregano; 1/4 tsp. garlic salt; 1/4 cup fresh basil, sliced thin; 2 ounces crumbled feta cheese; 1 shallot; 3 Roma tomatoes; 2 tablespoons balsamic vinegar; 1 tablespoon. Italian dressing; 1 tsp. white wine vinegar.
Directions: Preheat oven to high broil setting. Rinse and dice tomatoes, removing the seeds. Place into a small bowl. In another small bowl, combine the balsamic vinegar, Italian dressing, and white wine vinegar. Pour dressing over the tomatoes an stir. Slice the baguette into 12 one inch slices. Drizzle the slices with olive oil and season with oregano and garlic salt. Place on a foil lined broiling pan. Broil for 1 minute or until lightly browned on the edges. Remove from oven. Using a spoon, scoop one tablespoon of the marinaded tomatoes over each sliced baguette. Dice the shallot. Rinse the basil and pat dry. Thinly slice the basil. Sprinkle the shallot, feta cheese, and basil over the 12 baguette slices. Serve immediately.
