I've been extra busy this year with home schooling, so I decided to keep my holiday baking as simple as possible this year. As you may know, I am a field editor for Taste of Home Magazine and get to test out their delicious recipes each month. These Easy Flourless Peanut Butter Cookies are based on Taste of Home's Flourless Peanut Butter Cookies recipe, which has 3 ingredients. I added a teaspoon of vanilla and topped some of the cookies with Hershey bars, so it's technically a couple more ingredients than the original recipe. I also used a 1/2 cup of creamy peanut butter and 1/2 cup of crunch peanut butter in order to elevate the peanut flavor. The dough was very soft when I mixed it together. So I placed it in the refrigerator for a half hour before rolling it into balls. You can flatten the peanut butter balls with a fork or bake them in a ball. When they are finished baking, flatten the ones left as peanut butter balls by placing a Hershey bar piece into the center.

Ingredients: 1/2 cup creamy peanut butter; 1/2 cup crunchy peanut butter; 1 cup granulated sugar; 1 egg; 1 tsp. vanilla; 1 Hershey bar
Directions: Preheat oven to 350 degrees. Line a baking sheet with parchment paper. In a large mixing bowl, whisk together the egg and sugar. Add the 2 peanut butters and vanilla. Stir until combined. Refrigerate dough for at least 1/2 hour. Drop dough by rounded tablespoons onto the cookies sheet. Flatten some of the cookies crosswise with a fork. Bake for 15 minutes, or until edges are browned. Remove from oven. Use a spatula to transfer cookies to a wire rack. Flatten the peanut butter balls by placing a Hershey bar piece into the center. Makes approximately 12.
