It's Labor Day today- the kids' official last day of summer vacation! My son has butterflies in his stomach, as he's starting high school tomorrow. My daughter will start her second year of Intermediate School. She's familiar with the school, but she is nervous she will forget her locker combination or have trouble finding her classes. To ease their anxiety, my daughter and I made these "back to school" Chocolate Peanut Butter Fudge Brownies. They are rich and buttery and best of all, loaded with chocolate and peanut butter chips! If your child has food allergies, you can try substituting the peanut butter chips for salted caramel chips or butterscotch chips, provided they are made in a peanut free facility. I can't wait for the kids to sink their teeth into these tomorrow and tell me all about their first day. I'm sure they'll have their ups and downs as they begin a new year, but I'm hoping these Chocolate and Peanut Butter Fudge Brownies really make their day! Here's how we made them:
Ingredients: 1 and 1/2 sticks unsalted butter; 1/3 cup semi-sweet chocolate chips; 3/4 cup cocoa powder; 1 cup peanut butter chips; 1 and 3/4 cup sugar; 1 cup flour; 1 tsp. baking powder; 3 eggs; 1 tsp. vanilla; 1/8 tsp. sea salt.
Directions: Preheat oven to 350 degrees. Grease an 8x8 square pan or use parchment paper for easy lifting. Use a double boiler to melt the butter and semi-sweet chocolate chips or place chips and butter into a heat proof bowl over a saucepan filled with 1-2 inches of simmering water. Do not let the bowl touch the water. Stir frequently, until chips are butter are completely melted. Remove from the burner. Add the sugar. Stir with a whisk for 1 minute. Add the vanilla, cocoa powder, flour, eggs, and sea salt. Stir until smooth. Fold in the peanut butter chips. Bake for 35 minutes or until a toothpick inserted into the middle comes out clean or with few crumbs (no wet batter). Cool completely before cutting into squares.
