Being a lover of all things sweet, I'm rarely racking my brain for baking recipes that I enjoy. This month, however, I wanted to make these Chocolate Chip Banana Nut Muffins, to please the rest of the family. Let's just say, my family isn't always the easiest to please! Sure, my husband loves my Salted Caramel Cupcakes, my son can't get enough of my Chocolate Fudge, and my daughter is a huge fan of my Shortbread Cookies. But it's hard to make something that brings all three to the dessert table. So, I decided two out of three ain't bad, and went to my two least picky family members (I stress the least part) and they both agreed I should make a recipe that incorporates bananas. "Oh, and add some chocolate chips," my husband requested. "And make the muffins banana nut," Julianna chimed in. So, there were a few requests along with the banana muffins. But in the end, I came up with a winning recipe with these Chocolate Chip Banana Nut Muffins. There's something in there for everyone, and since these muffins contains fruit, I can eat them for breakfast, guilt free! Here's How I Made these crowd pleasing Chocolate Chip Banana Nut Muffins:
Ingredients: 1 and 1/2 cups sifted all-purpose flour; 1/2 cup white sugar; 1/2 cup light brown sugar; 1/4 cup vanilla Greek yogurt; 2 eggs; 1 tablespoon honey; 2 tsp. vanilla extract; 1/4 cup oil 1/2 cup milk; 4 mashed over-ripe bananas; 1 and 1/4 tsp. baking powder; 1/4 tsp. baking soda; 1/8 tsp. salt; 1/2 tsp. cinnamon; 1 cup chopped walnuts; 1 cup semi-sweet chocolate chips.
Directions: Preheat oven to 375 degrees. Line a muffin tin with 12 liners. In a large mixing bowl, combine the flour, white and light brown sugar; baking powder; baking soda; salt and cinnamon. In another large mixing bowl, combine the milk, eggs; oil; yogurt; vanilla extract; mashed bananas; and honey. Add the wet ingredients to the dry ingredients. Stir until just combined. Fold in the chocolate chips and walnuts. Batter will be lumpy. Fill each muffin liner just over 2/3 full of batter. Bake for 17-20 minutes, or until a toothpick inserted into the center of muffins comes out clean. If desired, sprinkle a pinch of light brown sugar over the muffins during the last minute of baking. Makes 12 muffins.
