Hope everyone had a happy New Year! We celebrated with going to the movies to see the new Star Wars film, followed by laser tag, bounce houses, a ball drop, and a silly string fight at midnight. Although it was a bit messy, the kids had a great time. Watching all the colors amongst the slushy snow made for a very bright start to 2017. I hope our year is as cherry and colorful as the silly string! I created these Funfetti Rice Krispie treats to keep the celebration going throughout our first week of the New Year. I hope you have a fun and festive 2017, as well!
Ingredients 3 tablespoons margarine; 6 cups Rice Krispies cereal; 4 cups regular sized marshmallows; one 12 ounce bag white chocolate chips; 1 tablespoon shortening; one 7.5 ounce jar colored sprinkles Directions In a large pan over medium heat, melt the margarine. Stir in the marshmallows. Stir frequently until the marshmallows are completely melted. Remove from the burner. Add the Rice Krispie treats and half of the sprinkles. Stir until combined. Using a butter spatula, spoon into a greased, or parchment paper lined, 9x13 baking pan. Allow Rice Krispie Treats to cool for about 20 minutes. Cut into squares. Place the white chocolate chips into a small microwave safe bowl. Add the shortening. Microwave for one minute. Stir until smooth. Dip the tops of the Rice Krispie treats into the melted white chocolate. Place on waxed paper. Immediately garnish with remaining sprinkles. Place on waxed paper to harden. Store in an airtight container. |
