Chocolate chip cookie dough ice cream is my husband's favorite flavor. In fact, I don't think he knows other flavors exist! I try to mix up my flavors while he stays faithful to his one and only. For an early Father's Day gift, I surprised him with these chocolate chip cookie dough ice cream cupcakes. Some people give their husbands and dads shirts or neck ties, others give the gift of cookie dough flavored cupcakes! I say, you might as well please your loved ones. And these, I must say, are certainly crowd pleasing. They disappeared faster than I could make them. Happy Father's Day to all the Dads out there. And happy baking to all you cupcake lovers of the world! Ingredients Cupcakes: One box devil's food cake prepared to directions on back or our recipe for devil's food cake; one carton chocolate chip cookie dough ice creams; miniature chocolate chip cookies for garnish Whipped frosting: 2 cups heavy whipping cream; one cup powdered sugar; 1 tsp. vanilla Directions Preheat oven to 350 degrees. Line cupcake tins with liners and fill each 2/3 full of batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Whipped frosting: Chill mixing bowl and whisk attachment of stand mixer in refrigerator for 1/2 hour. Using the whisk attachment of a stand mixer, whip the heavy cream on medium high setting for 5 minutes, or until soft peaks form. Add powdered sugar and vanilla. Whip several additional minutes until stiff peaks form. When cupcakes are cooled, use a small knife to carve a hole into the center of each cupcake. Scoop out the cupcake pieces. Fill each hole with chocolate chip cookie dough ice cream. Place cupcakes in freezer for one hour. Remove cupcakes from freezer. Pipe frosting onto center of each cupcake. Garnish with a miniature chocolate chip cookie. Place in freezer until serving. Any brand will do, but we are partial to Private Selection brand of Chocolate chip cookie dough ice cream. Carve a small hole into the center of the cupcake and fill with chocolate chip cookie dough ice cream.
