My daughter had her first band concert this week. The kids performed so well and really played their little hearts out. Afterwards, we celebrated our little flute player's big debut with these M&M chocolate chip cookies. They are packed with brown sugar, so they are nice and rich. They're also loaded with milk chocolate chips and milk chocolate M&M's-one of my favorite candies! What a night! We had great classical music followed by a delicious dessert. What more could you ask for? Here's how we made these tasty M&M Chocolate Chip Cookies:
Ingredients: 2 and 1/2 cups flour; 1 cup brown sugar; 3/4 cup granulated sugar; 2 sticks salted butter; 2 tsp. vanilla; 1 tsp. baking powder; 1 cup milk chocolate chips; 2 eggs; 2 and 1/2 cups milk chocolate M&M candies.
Directions:
Preheat oven to 350 degrees. Using the paddle attachment of a stand mixer, cream the butter and the sugars until light and fluffy. Add the eggs, one at a time, beating after each addition. Add the vanilla. In a medium mixing bowl, combine the flour and baking soda. Add the dry ingredients to the wet ingredients. Beat on low speed for 30 seconds. Turn to medium speed. Beat for 30 additional seconds. Fold in the chocolate chips and M&M's. Drop by rounded tablespoons onto an ungreased cookie sheet. Bake for 10-12 minutes, or until edges are browned. Remove from oven. Cool for several minutes. Use a spatula to transfer cookies to a wire cooling rack. Makes approximately 2 dozen cookies.
