Salad: One pound box bow tie pasta: 4 Roma tomatoes; one bunch spinach; 12 strips precook bacon;
Dressing: One cup Greek yogurt; 1/4 cup olive oil; 2 tsp. distilled white vinegar; 1 tablespoon lemon juice; 2 tsp. white sugar; 1/2 tsp. black pepper; 1 tsp. garlic powder; one tablespoon Italian seasoning
Salad: Cook pasta according to directions on back of box. Stain the noodles and rinse with cold water. Cut tomatoes into slices. Coarsely chop the spinach. Microwave the bacon according to the times on back of package. Crumble the bacon. Place pasta, tomatoes, spinach, and bacon into a large salad bowl.
Dressing: Place the Greek yogurt into a small mixing bowl. Add the olive oil and whisk until smooth. Add the lemon juice, sugar, pepper, garlic powder, and Italian seasoning. Stir until combined. Pour dressing over salad. Toss to coat evenly. Serve approximately 12.
