We're gearing up for Valentine's Day at our house! I'm humming Steve Wonder's classic "I Just Called to Say I Love You" while I'm baking these Chocolate Peanut Butter Heart Cookies. The combination of chocolate and peanut butter is a match made in heaven! This recipe is very easy to make, so the kids can get involved with rolling the dough and dipping the cookies into the chocolate. My husband isn't fond of sprinkles (but I love him anyway!) But I think adding some colorful red and pink sprinkles would make these cookies even more festive. Hope you're getting into the Valentine's spirit at your house, too! A holiday that gives me an excuse to eat chocolate is my kind of holiday! Here's how I made these Chocolate Peanut Butter Heart Cookies:
Ingredients:
Cookies: 1 and 1/4 cup creamy peanut butter; 2 and 1/2 cups flour; 1 cup sugar; 1 cup brown sugar; 1 cup whole milk; 2 eggs; 2 tsp. vanilla; 1 tsp. baking powder; 1/4 tsp. baking soda.
Chocolate: 2 cups semi sweet chocolate chips; 1 tablespoon vegetable shortening
Directions:
Cookies: Preheat oven to 375 degrees. Line a baking sheet with foil. Do not grease. In a large mixing bowl, combine the peanut butter and sugars. Using a hand mixer or stand mixer, cream for 1 minute. Add the milk, eggs, and vanilla. In a medium size mixing bowl, combine the flour, baking powder, and baking soda. Gradually add to the ingredients in the large mixing bowl. Mix on medium speed until combined. Chill dough in refrigerator for 2-3 hours or until ready to handle. Using a floured rolling pin, roll dough 1/2 inch thick. Use a four inch heart shaped cookie cutter to cut dough into heart shapes. Bake for 7 minutes, or until edges are browned. Cool on a wire rack.
Chocolate: Place chocolate chips into a small microwave safe bowl. Add the shortening. Melt chips on 50 percent power for 30 seconds. Stir. Repeat until melted. When cookies are cooled, Dip the tops into the chocolate. Place on waxed paper to dry. Makes approximately 18 cookies.
