1 cup sugar; 1 and 1/4 cup all-purpose flour; 1 tsp. baking powder; 1/2 tsp. vanilla; 2 eggs; 1/2 cup margarine; 1/4 cup milk; 1/3 cup pureed strawberries
2 and 1/2 cups powdered sugar; 1/2 stick margarine; 1/4 cup cocoa powder; 1/2 tsp. vanilla; 1/4 cup boiling water
Garnish; 1 container Dolci Frutta chocolate coating; strawberries, rinsed and dried
Preheat oven to 350 degrees. In a blender, puree enough strawberries to achieve 1/3 cup (about 10). In a large mixing bowl, cream margarine on medium speed of electric mixer. In a small mixing bowl, combine sugar, flour, and baking powder. Add to large mixing bowl. Add milk, vanilla, and eggs. Mix batter on medium speed for two minutes. Fold strawberries into cupcake batter. Fill lined muffin tins two-thirds full and bake for 18-20 minutes.
In a large mixing bowl, beat butter on medium speed until fluffy. Gradually add powdered sugar. Add vanilla, cocoa powder, and boiling water. Mix on medium speed until thoroughly combined. When cupcakes are cooled, pipe frosting onto the top of the cupcakes.
Garnish: Melt Dolci Frutta chocolates in microwave on medium power at 30 second intervals until melted. (about two minutes.) Rinse and dry strawberries. Dip strawberries into melted chocolate and allow them to harden on wax paper. When dried, place on top of cupcakes.
