Ingredients: 2 packages of 2 pound large boneless chicken breasts (4 pounds total) ; Panko Italian seasoned bread crumbs; 1 pint buttermilk; 1 tablespoon Italian seasoning; 1/2 tsp. pepper; 1/2 tsp. garlic salt; 1 cup mozzarella cheese; 1 cup pasta sauce; fresh basil for garnish; 4 zucchinis; 2 tablespoons lemon juice; 1 tsp. Italian seasoning
Directions: Preheat oven to 350 degrees. Pour buttermilk into a mixing bowl. Dip chicken into the buttermilk. Place breadcrumbs along with one tablespoon of Italian seasoning; garlic salt, and pepper into a mixing bowl. Roll chicken into bread crumbs and shake off excess crumbs. Repeat until all chicken is coated. Place into a greased 9x11 pan. Spiralize the zucchinis. Set aside. Bake chicken uncovered for 30 minutes. Remove from oven. Spoon pasta sauce over center of each chicken. Sprinkle mozzarella cheese over the sauce. Garnish with fresh basil. Add the lemon juice and 1 tsp. of Italian seasoning to the zucchini noodles. Place noodles in pan around the chicken. Bake for an additional 10 minutes, or until cheese is melted and chicken reaches an internal temperature of 170 degrees F.
