These blueberry Greek Yogurt Popsicles take me back to my junior year in high school when I was an exchange student in Germany for a summer. My host family was so kind. Every morning I was served my favorite breakfast of Nutella and toast and creamy Greek vanilla yogurt. They didn't speak a word of English and I knew very little German. But every time I smiled after eating their cooking, they smiled even wider. Greek yogurt is very trendy and tastes delicious. But I'm using Greek yogurt in these blueberry popsicles as a reminder that food is the universal language of love.
Ingredients
Blueberry layer: 1/2 cup blueberries; 3 tablespoons heavy whipping cream; 4 containers of low calorie blueberry yogurt
Cream layer: 3 cartons Greek vanilla yogurt; 2 tablespoons heavy whipping cream; 1 tsp. vanilla
Directions
Blueberry layer: Place whipping cream at bottom of blender. Blend ingredients on high for 3-5 minutes, or until fruit is combined and mixture is smooth. Place into the bottom of popsicles molds, filling 2/3 full.
Cream layer: Place whipping cream at bottom of blender. Blend for 3 minutes, or until ingredients are combined. Mixture will still be thick. Place on top of blueberry mixture. Place a wooden stick into the center of the molds.
